Chocolate Chip Cookie
COOKIE MIX: MAKES 15 COOKIES
For Cookie Dough
1/2 cup (113g)) butter, softened
1 large egg
1/2 tsp vanilla
HEAT: Preheat oven to 350º F. Line a flat cookie tray with parchment paper.
MIX: Mix softened (not melted) butter, egg and vanilla until there are small pieces of butter dispersed throughout the wet mixture. Empty contents of cookie mix into a bowl or stand mixer with paddle attachment. Mix together at low-medium speed until fully combined. Do not overmix the dough.
BAKE: Use an ice cream scoop or spoon to form cookies onto tray. Bake for 12-14 minutes.
FOR BLONDIES: MAKES 9 BLONDIES
Spoon the batter into an 8x8 baking pan lined with parchment paper. Smooth out to an even layer with a spatula or the back of your spoon. Bake for 30-35 minutes until the outer edges are brown. Let blondies cool and slice into squares.
For "Levain Style" Cookies
Make sure the butter is cold and cut into cubes. The eggs should also be cubed. Mix just until the dough comes together - do not overmix. After mixing the dough, scoop 5 oz of dough per cookie onto a parchment paper covered tray, and use your hands to roll each piece into a tall dough ball that is thicker than wider, so that it looks like a little mountain. Refrigerate the dough for an least an hour. Bake the cookies at 400 F for 10-12 min.
